Gowdru style mutton curry

As the entire country is in a discussion of beef lets give some attention to goat. Here is a recipe to make Karnataka style Mutton curry also known as Gowdru style mutton curry. Its a spicy mutton recipe which is rich with spices and masala. This unique recipe was shared to us by Dhivya Shetty Shridhar, A food lover and also a model from Bengaluru. Requirements

Mutton:  1 KG

Turmeric powder: 2 ½ Tsp.

Garlic: 1 whole piece

Onion: 6 Medium sized

Cloves: 5 Numbers

Cinnamon: I inch length

Pepper: 1 Tbsp.

Cumin: 1 Tsp.

Ginger: 1 piece.

Dry red chillies: 3 Nos.

Coriander seed:  4 Tsp.

Green chilly 6 to 7

Grated fresh coconut: half of a coconut

Coriander leaves

Oil, Salt and water as per requirement

Method of preparation

Wash the mutton pieces for about 3 times. In pressure cooker , add 2 Tbs oil and add  one medium chopped onion , fry until it golden brown , add ½ Tsp of turmeric powder , mix it well , then add mutton pieces mix well ,  after 10 minutes add salt when the water starts leaving the mutton pcs ( this is when the salt is absorbed thoroughly ) then add 2 medium chopped tomatoes and mix well , close the lid , pressure cook it for about 5 whistles.

For preparing the Masala

Grill one medium onion and one whole garlic directly on a low flame, keep it aside. Then take a wide pan, Add 2 Tsp oil , then add 2 medium cut onions , 5 cloves , 1 inch cinnamon , 15 pepper seeds and fry for about 3-4 minutes on medium flame, then add 1 Tsp cumin seeds , 12 cloves garlic, 1.5 inches sliced ginger pieces, dry red chilies and fry for a min , then add coriander seed 4 Tsp and fry for a min, then add 6-7 whole green chilies fry for a min, then add  grated fresh coconut and fry for 10 minutes on a low flame, in the last on a high  flame fry for a min and turn off the flame. Put a bunch of fresh coriander leaves in the pan and mix well, let it cool.

Put all the above ingredients in the blender or a mixer, along with add the grilled onion and garlic ( put along with the burnt peels, it gives smoky taste in the curry).Add required amount of water and Grind into a smooth paste. Add the grounded masala to the boiling mutton, mix well, add sufficient water.  Add required amount of salt, mix well, and pressure cook for about 5 whistles.
